Kids + messy recipes + clean ovens don’t go together very often. My boys love to help me cook and want to participate in the entire process but no matter the recipe it seems to end up a mess! I have a messy recipe for you today that the boys like to help make but that leaves my oven (and kitchen) less than desirable. It’s definitely worth it though!

Living in the Southwest we eat a TON of Mexican food (ok we’d eat tons of Mexican food no matter where we lived) and this dessert finishes off a Mexican feast perfectly.

 CINNAMON FLAN

  • 2/3 cup white sugar
  • 14oz can of condensed sweetened milk
  • 2 cups heavy cream
  • 1 cup milk
  • 5 eggs
  • 2 teaspoons vanilla
  • 1/2-1 teaspoon of cinnamon

Preheat oven to 350ºF

In a small saucepan place the sugar with a bit of water (you’re going to make caramel) heat on medium – medium high constantly stirring (sugar burns easily) until a caramel forms (once it starts boiling you can lift the pan to just above the heating element to reduce burning risk). Remove immediately from heat.

Poor into a 1.5qt casserole dish or 9″ cake pan and swirl to coat the bottom – set aside.

In a blender combine the rest of the ingredients and blend on medium/high for about a minute (don’t let it get too frothy)

Pour over caramel until it just reaches the top of the pan (can you see how this recipe gets messy?!)

Place cake pan into another larger pan and slide into the oven. Add HOT water to the 2nd pan (about an inch or so)

Bake for 50-60 minutes until set. It will still be jiggly but not watery. Remove the flan pan from the hot water and let cool a bit. Invert onto serving dish and enjoy warm or cold (we like it cold!) you can spoon some of the extra caramel on top to make it extra sweet!

(the mess comes from the inevitable spilling of the flan, getting the water into the pan, and getting everything OUT of the oven!)

 So good!

  1. When I was a little girl, my mom was making a carrot cake/pie for one of her coworkers. Something went wrong…not sure if she used the wrong flour or what, but it completely overflowed the pan and went ALL OVER THE OVEN. The best part was that she obviously couldn't give it as a gift, so we got to eat it. It was delicious and I'll always remember carrot cake that way.

  2. When I bake cinnamon bread it always spills over in my oven, leaving a huge mess. Of course, I never remember this before I put the bread in the oven, so I never put down foil or a baking tray below it. My old oven was self cleaning, but the oven in our new house is so basic it doesn't have it. 🙁

  3. ugh lasagna! for some reason it get's everywhere! i use a darn cookie sheet, too… but it bubbles and spits all over. nice. i need this LG oven in my life please!

  4. Homemade pizza always makes a smoking hot mess. This will do the trick!

  5. I love roasted chicken, but it seems to splatter all over the oven. Actually, that's true of just about any roasted meat. I do remember when I was in high school, a friend of mine was BANNED from the band bake sale. She was doing her homework and baking brownies at the same time, and put 1/2 cup of baking soda into the brownie batter. Homemade chocolate volcano! Cool looking, but inedible. And oh, the clean-up!

  6. Anything my 9 year old puts in the oven! I don't know how he can always make a mess but he does. But truthfully I love that he loves to cook.

  7. Caramel Apple Monkey Bread is soooo good, but the caramel always seems to seep out of the pan. But it's worth the mess for that yummy goodness.

  8. Lasagna is always messy. Although, the other day I made yeast free cinnamon rolls and that made a huge mess.

  9. We LOVE to make are mini apple pies. NO MATTER what the oven takes a beating!!

  10. Everything my boys and I make turns into a MESS!!!! Lasagna makes a pretty good mess! =)

  11. My favorite messy recipe is with corn starch and food coloring, mixed together in whatever cups you don't mind your kids holding and playing with…then adding soap, shampoo or conditioner! Instant, safe, non-toxic bath paint that is pretty easy to clean up!

Okay, so that's not the oven recipe, but it's a great recipe to make once everything is in the oven! My son helps cooking everything from kolaches to chili…and everything becomes a mess! Sticky apricot filling, flour all over the counter for rolling out the cookies, and seeds everywhere from chopping up the veggies!

  12. Every time we make homemade Hawaiian BBQ pizza, it always makes a big mess.

  13. I'm not sure what it's called but I make a recipe with apples, sweet potatoes, cinnamon, and butter that is very messy.

  14. Mmmm…that looks tasty!! We cook Mexican food a lot and this would go nicely with my messy but delicious red chili enchilada bake! Thansk for the chance!! =)Barb

  15. We like to bake pizzas right on the oven rack, so I always end up with cheese on the bottom of my oven.

  16. Apple Pie always makes a huge mess in my oven. We just bought this house six months ago and I'm pretty sure the oven is older than my grandma! Would really like to win this!

My favorite "messy oven" recipe is Ginger Baked Chicken. It is a whole chicken baked over a pan on an open rack in the oven. It is crusted, and basted regularly until it is crispy and done. A VERY MESSY RECIPE, but an excellent chicken dish!

  18. When I make my pumpkin bread, even if I skimp on the ingredients, it always explodes or overflows in the oven! Stinky, stinky oven.

  19. My grandma's apple pie recipe is delicious, but messy whenever I make it!

  20. I just made a Blueberry Buckle last week, and the blueberry juices bubbled up over the baking pan. It created a sticky, burnt mess! I cannot wait to try this recipe for flan. Looks incredible!

  22. I don't really know why, but glazed salmon always causes a mess for me. I know it's not supposed to. I guess I'm just special!

  23. Lasagna always bubbles over no matter what I do…cant live wihtout it though

  24. It never fails that my berry or peach cobblers always overflow and drip down the sides of the baking dish, making the worst sticky messes in my oven.

  25. The recipe that leaves my oven messy is my enchiladas! I stuff the baking dishes full and use lots of cheese and sauce which, even if I cover them, tends to bubble and slosh over the edge when I pull them out 🙂

  26. Cherry Pie – once the stuff starts bubbling it's going to go everywhere!
