Fun Food for Lunch – Waffle Sandwich

School lunch used to be my least favorite thing about the school year. I have no idea why. Maybe it was the pressure of pulling together nutritious food that my kids would like and that was safe for them to eat (I have one who avoids gluten and dairy)? Either way it’s definitely easier now that I have the boys making their own! We live across the street from a Fry’s Food and Drug store and have shopped at Fry’s since I was a little girl! One thing I am SO happy they added to the store is the natural and organic section. It makes it super easy to pick up items for lunches all in the same area. Here’s an idea of what I might pick up on a re-stock visit. Fun for lunch - waffle sandwich So what do my boys like to eat in their lunches? First of all – a TON! Growing boys can sure chow down on food! I try to have lots of variety on hand as well as a mix of sweet, savory, crunchy and smooth. I thought it would be fun to share one of my boys’ favorites – waffle sandwiches! We rarely use these Simply Truth gluten free waffles for breakfast because my boys always want them for lunch! You can make any type of sandwich on a waffle – grilled cheese, ham and cheese, tuna etc. An almond butter fruit waffle sandwich is one of the popular choices around here! Fun for lunch - waffle sandwich Toast the waffle first (actually we’ve found that toasting any gluten free bread before making a sandwich and packing helps the texture at lunch time!) spread your favorite nut (or seed) butter on one of the waffles. Today we used organic unsweetened almond butter. Then top with your favorite fruits like bananas, berries, apples sliced thin… Fun for lunch - waffle sandwich Fun for lunch - waffle sandwich Fun for lunch - waffle sandwich You can add a drizzle of natural honey if you like – these organic blueberries are pretty sweet so we didn’t need any! I have one boy who likes his sandwiches whole and another who likes them cut up a bit. Either way, these are simple and fun to make AND eat. Fun for lunch - waffle sandwich We’ll usually round off the meal with some veggies and dip like hummus (which is a great dip to add a few more veggies into), a few chips, another fruit if there wasn’t much in the sandwich, rolled ham and a treat of Silk dark chocolate almondmilk! They also like muffins, cookies, gluten free crackers etc. to throw in. Our local Fry’s Food and Drug store also carries Silk yogurt which we like to make into yogurt parfaits or easy items to throw in when you’re in a hurry like Horizon snacks.

I think the key in our house is variety! Having lots to choose from help the morning go a bit quicker. Because I try to buy lots of organic and gluten free having easy choices helps lunch making and eating so much easier for the boys.
