I recently realized that both Cocoa PEBBLES™ and Fruity PEBBLES™ just happen to be gluten-free (they’re the same cereal you know and love) which means I get to share them with my boys! I’ve been gluten-free for over 8 years now and miss being able to share nostalgic foods with my kids. I am always excited to find that foods I loved as a kid are actually gluten-free and I get to enjoy with the boys. My 15-year-old started taking intro to culinary in high school this year. He’s always loved to help me cook, but now he’s into learning all sorts of new skills, as well as creating his own recipes. The problem with his intro to culinary class is that I can’t always taste-test his creations, so we’ve started cooking more at home. We wanted to come up with a fun treat that anyone would love (perfect for parties or having friends over) so we decided on Cocoa PEBBLES™ Brownies and Fruity PEBBLES™ Blondies. Over the years, I’ve taught my boys that eliminating gluten does NOT mean sacrificing taste or fun in our recipes. We make fun treats that are delicious whether you’re gluten-free or not.

How to Make Cocoa PEBBLES™ Brownies

These brownies have such a great texture made even BETTER with Cocoa PEBBLES™. They give this recipe an amazing chewy crunch that you never knew your brownies needed. Always make sure that all of your ingredients are gluten-free. Here’s how you make them:

Gluten-Free Cocoa PEBBLES™ Brownies

 Gooey brownies with added texture from Cocoa PEBBLES™ which happen to be gluten-free!
Prep Time 5 mins
Cook Time 30 mins
Course Dessert
Servings 9

Ingredients
  

  • 1 stick butter melted
  • 2 eggs
  • 1 cup brown sugar
  • 1 tsp vanilla
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup gluten-free flour mix
  • 1/2 cup ½ cup Cocoa PEBBLES™

Instructions
 

  • Spray an 8x8 pan with oil and preheat oven to 350F.
  • Mix butter and eggs in a bowl.
  • Mix brown sugar and vanilla into butter mixture until fully incorporated.
  • Add in cocoa powder and flour until blended well.
  • Fold in Cocoa PEBBLES™
  • Place pan in the oven for 20-30 minutes or until set and a toothpick inserted into the center comes out clean
  • Enjoy!

HOW TO MAKE FRUITY PEBBLES™ Blondies

These are a bit different than the brownies. More of a cakey texture and a totally different flavor with the fun fruity bits! One of my boys loved this one the most while the other loved the brownies, but everyone loved either recipe. Feel free to add some white chocolate chips to these if you want, but they’re definitely not needed.

Ingredients
  

  • 1 stick butter melted

  • 1 cup gluten-free flour mix
  • 1/2 cup Fruity PEBBLES™

    • Oh no! Sorry it didn’t turn out. It definitely worked great for us, maybe it needed to cook a little longer? And I’m sure it wouldn’t hurt to add a little less butter!
